Have you ever dreamed of eating pancakes and still living your healthy life? Well then I would like to share my favorite dish with you. The healthy oatmeal pancakes!

These pancakes are my favorite dish since I was like eight years old. My grandmother made these once for me and when I tasted it, I completely fell in love with the sweet taste of these fluffy pancakes. Then, I started making these pancakes myself and now I still make these sometimes for lunch if I want to pamper myself. What I like so much about this dish is that you literally can eat it every time. You can make these for breakfast, lunch and even dinner. In addition, this recipe is very easy to make, so it’s like the perfect dish if you don’t have a lot of time but still want to eat something delicious. The ingredients fit together perfectly and make these lovely, sweet and fluffy pancakes together. These pancakes never get boring because you can vary a lot with different flavors. For instance blueberry pancakes for a sweet and fresh taste or apple cinnamon pancakes for a warm and full taste. Personally I really like these pancakes with cinnamon in and some slices banana on top. Cinnamon makes it give you this warm aromatic taste which I adore.

Pancakes

  • Ingredients:
  • 1-1/4 cups all-purpose flour
  • 1/2 cup oatmeal
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt (optional)
  • 1-1/4 cups fat-free milk
  • 1 egg, lightly beaten
  • 1 tablespoon vegetable oil

Stir-Ins (optional)

  • For blueberry pancakes: 1 cup fresh or frozen blueberries (do not thaw)
  • For banana pancakes: 1 medium-size ripe banana, mashed, and 1/8 teaspoon ground nutmeg
  • For apple cinnamon pancakes: 3/4 cup finely chopped apple, 1/4 cup chopped nuts and 1/2 teaspoon ground cinnamon
  • For chocolate chip pancakes: 1/2 cup semisweet chocolate chips

Cooking Instructions

In large bowl, combine flour, oats, baking powder and salt; mix well. In separate medium bowl, combine milk, egg and oil; blend well. Add liquid ingredients to dry ingredients all at once; stir just until dry ingredients are moistened (do not over mix). Add one of the stir-in options, if desired; mix gently. Heat skillet over medium-high heat (or preheat electric skillet or griddle to 375°F). Lightly grease skillet. For each pancake, pour 1/4 cup batter into hot skillet. Turn when tops are covered with bubbles and edges look cooked. Turn only once. Serve & enjoy!
